Galacto-oligosaccharide (GOS) is an oligosaccharide, which is mainly produced by the hydrolysis of lactose.

Galacto-oligosaccharide (GOS) is stable at pH 7, and thermal stability is due to the presence of β-glucosidic bonds between the moieties. The sweetness of Galacto-oligosaccharide (GOS) is generally lower, usually 20-40% times that of sucrose. Therefore, Galacto-oligosaccharide (GOS)can be used as a filler in various foods to enhance the flavor of other foods. Because Galacto-oligosaccharide (GOS) is not easily decomposed in the upper gastrointestinal tract and has a low caloric value, it is suitable for low-calorie diets and diabetic patients.
