Description of Roquette Modified Starch:

The Modified Starch produced by French company Roquette uses physical, chemical, and enzymatic conversion methods to oxidize, etherify, esterify α Melting and gelatinization to change the properties of starch. Improve the freezing stability of starch paste and its resistance to high temperature, acid, alkali and shearing force, and improve the gel and film forming properties of starch paste. It includes acid modified starch, cross-linked starch, and substituted starch. Crosslinked starch can delay the coagulation of starch, resist freeze-thaw, and enhance its shear resistance. It is used for the production of convenient foods, such as instant rice, noodles, and frozen foods. Acid modified starch greatly improves the gel of starch, and is used in the production of jelly, sandwich cake and soft candy. After the substitution of starch, such as esterification and etherification, its anti-aging and retrogradation ability is enhanced. Chemically improved glutinous corn starch can be used as a thickener, emulsifier, adhesive, and suspending agent in the production of sausages, canned soup, canned paste, frozen food, and cold vegetable seasoning. Phosphatized wheat starch can be used as an emulsifier, thickener, and stabilizer in food. Adding 1% gelatinization to noodles can improve their quality. The phosphate monoester dispersion of starch has the properties of transparency, high viscosity, anti-aging, good stability, strong water retention and freeze-thaw properties, and plays the role of viscosity enhancement and shape preservation in food.
