Lactobacillus bulgaricus is a subspecies of Lactobacillus deutschmus, which is currently widely used in the process of making yogurt. The subspecies was first identified by the Bulgarian microbiologist Sedmon Grigorov in 1905 and named after his homeland, and in 1984 Weiss et al confirmed it as a subspecies of Lactobacillus deutsche .
