Fresh Frozen Mullet Roe

Every year when the rape flowers bloom, the mullet in the south of Yellow Sea begins it`s Spawning season. Other fish meat will often become thin in seed production period, but mullet is different, the more in seed production period, more fresh meat fat, mullet seeds many, like the belly. The mullet caviar very tender and delicate. Mullet each more than 3 to 5 pounds, up to tens of kilograms of big fish, bluish grey, with black spots on both sides and dorsal fin, the annual seed production period particularly fresh meat. From late April to early May each year, they swim offshore to spawn, when the fish is succulent, tender and tasty. The roe of this mullet is salted, dried, and compressed to make a specialty food across the world, such as Greek avgotaraho, Taiwanese Wuyutsu, Korean myeongran jeot, Japanese karasumi, Italian bottarga, Turkish Haviar and Egyptian batarekh. In Egypt, the fish itself is salted, dried, and pickled to make feseekh.
