How long will vacuum sealed food last?
In general, fresh agricultural products or lightly processed meat products can be stored at room temperature for 2 days. When vacuum packed, it can be extended up to 6 days, and in some cases up to 18 days. Dried fruits being can be kept for a longer period of time, even more than twelve months. Cooked food is a bit shorter, usually, it can stay fresh for about 15 days in winter and spring, and only 4 days to 1 week in summer and fall, preferably refrigerated. The principle of vacuum packaging to preserve food is mainly to remove oxygen. Food spoilage is caused by the growth and multiplication of microorganisms and bacteria. Most microorganisms, such as mold and yeast, require oxygen to survive. Vacuum-packed food removes oxygen from the package, which also inhibits the growth and reproduction of microorganisms. The unsaturated fatty acids contained in oils and fats are susceptible to oxidation and degradation. With vacuum deoxygenation, it also prevents food from oxidizing.
